corvus {a coffee lover's dream}

There's a new coffee shop in Denver and it is not to be missed - Corvus Coffee Roasters.

Pour overs and cold brews and flat whites and cortados. Ethically sourced, sustainably farmed beans refined locally in small batches, Norweigan-style in a Dutch cast-iron roaster. Concrete floors and exposed ductwork. Mumford & Sons and Feist playing through the speakers.

If you don't speak hipster, you probably didn't understand half the words in that paragraph. But that's no reason to be intimidated by Corvus, my new favorite spot for coffee in Denver. Hipster hooplah aside, there are really only two things you need to know about Corvus: it's welcoming and the coffee is insanely delicious. 

At Corvus, all the pretentiousness that has become synonymous with all-things-hipster has been replaced with a distinctly un-hipster feeling - ENTHUSIASM. The staff is exceptionally friendly and knowledgable, and they want you to love (or at least enjoy) coffee as much as they do. They'll happily explain the difference between a cortado and a latte without the faintest hint of an eye roll that says, "I bet you drink Maxwell House every morning out of a mug that says Bush/Cheney 2004." In fact, they are so serious about spreading the love that they will soon start offering bi-weekly classes for those who are interested in learning a little bit more about different brewing techniques. 

Also, the coffee is delicious. And that's because Corvus takes their beans seriously, obsessing over every detail of the processes from growing and sourcing to roasting and brewing. First, they source their beans from single estate and privately owned farms, working closely with a Q-Grader and source-local brokers to find the highest-quality sustainably farmed product. Then they roast those beans with all the same care they put into finding them; Corvus specializes in the Norwegian style of roasting. The finished product is light and sweet but still fully developed. All that care does translate to a slightly higher price point, but Corvus works hard to make sure their customers know that those few extra cents are the result of a vastly superior product which in turn translates to a better livelihood for the farmers.

I don't care how you take your coffee. Just do it at Corvus.
